Garden fresh recipe: Tomato, basil + chickpea salad

Summer heat is in full effect, and it’s the perfect time to indulge in cold foods that will keep you feeling refreshed! Nothing tastes quite as delicious as fresh ingredients straight from your garden. Check out this tomato, basil + chickpea salad recipe that will satisfy your taste buds and help keep you cool!
 

YOU'LL NEED:

1 can chickpeas
2 tbsp sesame seeds
1 small red pepper from the garden
½ cup cilantro from the garden, chopped
10 basil leaves from the garden
1 tbsp sesame oil or olive oil
2 spring onions
1 red onion, small
1 tsp balsamic vinegar
1 tsp nigella seeds, optional
2 big tomatoes from the garden
salt to taste

TO MAKE:

Rinse + drain chickpeas and place in a large salad bowl. Chop pepper, cilantro, onions, and tomatoes. Add to the chickpeas in the bowl. Add sesame or olive oil and balsamic vinegar. Mix well and salt as needed. Garnish with basil, sesame seeds and nigella seeds. Eat up + enjoy!
